Running Recipes - Mediterranean Chicken Tray Bake

This tray bake is a quick and easy dish to make for the whole family or batch cook and use for lunch the next day. It is high in protein, perfect for repairing muscle damage caused by long-distance running. It also contains anti-inflammatory and antioxidants foods such as red peppers, garlic and tomatoes, supporting a healthy immune system and improved recovery in marathon training.
INGREDIENTS
- 520g of chicken breast
- 170g of chopped beef tomatoes
- 80g of runner beans
- 320g of chopped red peppers
- 196g of diced courgette
- 120g of chopped red onion
- 500g of halved baby potatoes
- 15g of diced garlic
- 1 tsp of paprika
- 1 tsp of black pepper
- 1 tbsp of chopped basil or rosemary
- 1 tbsp of rapeseed oil
Serves: 4 Prep
Time: 10 mins
Cook Time: 35 mins
Method
1. Heat oven to 200C/180C fan/gas 6.
2. Par boil the potatoes for 10 minutes.
3. Meanwhile, chop all of the vegetables into chunks and place on baking tray.
4. Add the par-boiled potatoes to the vegetables and garlic and toss in half the oil. Season with pepper and paprika.
5. Place in the preheated oven for 20-25 minutes until the chicken is cooked
6. Plate up the chicken, vegetables and potatoes, add some of jus from the tray bake onto the plate and sprinkle with freshly chopped basil or rosemary.
